Rich Rice Pudding

Rich Rice Pudding

 Medium Saucepan
 Small Bowl
 Medium Glass Roasting Dish
 Wooden Spoon


 50g/2oz Butter or Spread
 50g/2oz Soft Brown Sugar
 850ml/1.5Pts Milk
 100g/4oz Pudding Rice
 3 Eggs
 ½tsp Vanilla Extract
 Fresh Nutmeg


Pre-heat oven to 150°c / 300°f / Gas Mark 2.
Grease the roasting dish liberally with butter.
Pour the milk into the saucepan and add the rice.
Heat gently until the rice has softened (approximately 10 minutes).
Continue to cook gently until the milk has thickened (further 10 minutes).
Add the butter, sugar and vanilla and stir until dissolved.
Remove from the heat and allow to cool for a few minutes.
Beat the eggs in the small bowl and add them to the saucepan.
Stir well then pour into the buttered roasting dish.
Grate nutmeg over the top.
Place in the centre of the oven for 35-40 minutes or until the top has browned.
Serve immediately.
