Chocolate Orange Mousse

Chocolate Orange Mousse

 3 Small Mixing Bowls
 4 Ramekins or
   Glasses for Serving


 225g/8oz Good Quality
   Dark Chocolate
 4 Eggs
 Grated Rind of 1 Orange
 75ml/3floz Double Cream
 2 Tbsp Orange Juice
   or Orange Liqueur


Bring a saucepan of water to simmering point.
Break the chocolate into small pieces and place in a bowl that will fit over the saucepan.
Add the grated orange rind and orange juice or liqueur.
Place the bowl over the saucepan and heat gently, stirring all the time, until the chocolate has melted.
Separate the egg yolks from the whites (save the whites in another bowl) and beat well.
Add the beaten yolks to the melted chocolate while it is still hot.
Continue beating until they are combined well.
Leave to cool for 10-15 minutes.
Beat the egg whites until you get soft peaks.
Carefully fold the whites into the chocolate.
Spoon the mixture into the ramekins or glasses.
Cover with clingfilm and refrigerate for 3-4 hours.
Whip the cream and place on top of the mousses.
