Transcript: It is Saturday night and the restaurant has not been too busy. About two hours prior to closing, the sous chef sends home 2 of the 5 line cooks, and the FOH manager sends home 3 of 8 servers and bussers. A party of 30, hosted by a regular customer, walks in – no reservations. Because of the longer wait to seat and serve the party, they have been drinking a bit excessively, and have become loud and raucous, disturbing your other customers. Table of Contents Mission Statement Restaurant description Leadership Style descriptions Job descriptions Scenario Write Up SERVER Our desired outcome would be the customers leaving big tips and with big smiles. Because that’s what the gourmet chicken house is about. Making the customers feel as though they are at home eating a home cooked meal. Greet them at the door as they are leaving and invite them back. If it’s another big party advise them to make a reservation an hour prior to coming to ensure they are seated in a timely manner. SOUS CHEF There have been other main item places such as steak houses. Why not a “chicken house”? It’s different as you get to try different variations of chicken that you would not regularly get at home. There are several places in which you go and get the same thing every time. But that gets redundant and boring; defeats the purpose of going out. That’s why our unique original flavors will have you wanting to comeback and try something else. RESTAURANT DESCRIPTION Now as the scenario goes, the customers were being very loud and obnoxious. At this point, as an autocratic leader one has to take a stand. Tell them that they need to please wait outside as we make a table big enough to seat everybody. Then once one does that they will obviously need a little more help than expected. I would make an autocratic decision and take it upon myself to call in 1 or 2 servers and bring in 1 more cook. That way the flow is a bit easier and the guessed are served in a timely matter. Also there needs to be a steady flow. Now as the party didn’t make reservations, they should not get discounts but shall receive the best customer service as should every party. A server's responsibilities depend greatly on the business; however, in all cases his or her primary duty is to provide good customer service, take orders and deliver food. In most situations, servers are expected to answer questions regarding the menu. They work closely with other wait staff and the kitchen to ensure the restaurant is operated efficiently. LINE COOK After reviewing the scenario, the most reasonable style of leadership is the autocratic style. We chose this for many reasons but for the most part, it’s the most logical one to us. Although the party of 30 did not make a reservation, they still need to be treated with the same respect. You also need a stand out leader. An autocratic leader is a self-made decision maker. He takes it upon him self to access the situation at hand and think of the best, non biased, decision that will both help his employees AND most importantly the customers. An autocratic leaders goal is to get the custumors in and out with a smile on their faces. A person must have a wide knowledge of mixed drinks, be friendly to both customers and staff and be a good listener. Great bartenders can give quality, attentive service to their own customers, while still getting the staff their drinks. Honesty is another important requirement. The bartender handles a lot of cash each shift and you need to be able to trust that he or she will not siphon any off the top. Our mission is to make our guest feel at home and have good quality food in a timely matter in a clean and safe environment. A Manager should be able to open and close your restaurant, purchase food and beverage inventory, open the register, track inventory, train and manage the staff, work with suppliers and manage your advertising. BARTENDER FOUR LEADERSHIP STYLES Responsible for the daily operations of the kitchen. and provides professional leadership and direction to kitchen personnel.Ensures that all recipes, food preparations, and presentations meet restaurant's specifications and commitment to quality.Maintains a safe, orderly and sanitized kitchen.Demonstrates this by example, using proper food-handling techniques. The Gourmet Chicken House Management Supervision & Career Development Project Thursday 10-1 By: Darrius Taylor Kaitlin Covey Lorena Gonzalez Ezekiel Hernandez Octavio Monzon Judging by the name, you might just think we are just a fried chicken “pick up n go” kind of place because that’s what a lot of chicken places these days are all about. But oh are you in for a treat. As a casual dining restaurant, we specialize in authentic, gourmet chicken dinners with a good portion of our food made from scratch at a moderate price. Transcript: Thank You! August Garner HSC 1100 Fishing Fishing is the number one stress management technique that works for me the most. Since I was young, I have always enjoyed fishing. When I get stressed or overwhelmed, I always pack up my fishing rods and tackle, and head out to a body of water to fish. Fishing helps me to clear my head and think about what is going on in my life. Fishing How To: Fish How To: Fish First, decide the location where you want to fish. Gather all supplies: Fishing rod & reel, tackle, bait, fishing line, etc. When you get prepared to go, get to the location where body of water is and do whatever you may need to do, to get the rod & reel ready to cast. I personally like to throw the fish back rather than keeping them. Spending Time with my Family When I am with my family, I don't feel stressed or alone. I know that they will always be there for me. When we all spend time together, we make sure to make memories. I enjoy all of the quality time I am able to share with my family that I love dearly. Spending Time with my Family How To: Enjoy Time With Family How To: Enjoy Time with Family When you spend time with your family, it is always best to have no distractions from family time. Try to relax and make as many memories as possible. Capture a few pictures, so you have something to look at and remember the moments. Try to do fun things together. For example: play games, go to the beach, watch a movie, cook, etc. Hiking Hiking helps me to relieve stress by exercising and staying active. I am also able to see the true beauty of nature, which makes me appreciate where I live more. Hiking How To: Hike How To: Hike First, make sure you have everything you need to be prepared for hiking. For example: water, appropiate clothing & shoes, first-aid kit, camera. Pick the location of where you are going. Always notify someone of where you are going, in case of an emergency. Head to the location. Become familiar with the trail. Enjoy the nature. Capture a few pictures of the trails and or animals that you might see. Listening to Country Music Listening to Music Music helps me tremendously when I am feeling overwhelmed with thoughts going through my mind. I listen to music a lot when I am fishing or in the car. I enjoy listening to country music the most because I can relate to the lyrics of the songs. How To: Listen to Music How To: Listen to Music First, decide what genre of music you would enjoy listening to. Next, pick the best way to access the music. A couple of examples would be, Pandora, Youtube, car radio, Spotify, Apple Music, etc. Then, pick the song you think you would like to listen to. Finally, enjoy the music and allow it to ease your mind or stress levels. Swimming I have always loved to swim. When I swim, my body is able to relax more, which then helps me to have a relief from stress. I also get an excerise when I swim by doing a few techniques, which is very beneficial. It is also another technique that helps me to clear my head and focus on swimming. Swimming How To: Swim How To: Swim Make sure you have a body of water to swim in, such as a pool, river, lake, creek, ocean, etc. Always make sure you know enough skills to swim safely. Wear the appropriate clothing. If you need a life jacket or safety vest, wear one. Be aware of your surroundings. A Good Amount of Sleep A Good Amount of Sleep I have always battled with having a good sleep schedule, but since I have been really trying to train my body to go to sleep at a decent time, I have noticed a huge difference as far as my stress. Not having an adequate amount of sleep can be a big cause of stress. I have been going to bed early and waking up early, and that has helped my stress a lot. How To: Get An Adequate Amount of Sleep How To: Get A Good Amount of Sleep Train your body to go to bed early and wake up earlier in the morning. Shut electronics and lights off 30 minutes before you are ready to fall asleep. Find out how much sleep is an adequate amount of sleep for your age and try to get that many hours of sleep. Try to be as comfortable as possible. Stay active enough throughout the day, so you are tired enough at night.
